Soklim founded Eleven One Kitchen in 2014 with a clear mission: to provide delicious, healthy Khmer food without MSG, suitable for every palate — and to do it in a way that genuinely cares for Cambodia’s environment. With more than 20 years’ experience in the culinary and hospitality industry, she leads as a pioneer of eco-friendly restaurant practice in Cambodia — inspiring hundreds of restaurants to adopt more sustainable operations.

Named after her lucky numbers, Eleven One has grown from a single outlet in the vibrant Toul Tompong area to two beloved Phnom Penh restaurants — each a little oasis of honest cooking, local produce, and warm hospitality. Recognized at the Kindness and Leadership Asia Pacific 2022, Soklim leads with warmth and integrity, giving her best day after day to train local talent and serve food she’s proud of.

Facing one of Cambodia’s greatest challenges — the rising tide of single-use plastic — we follow a strict zero-plastic policy at both restaurants. Bamboo straws, compostable packaging made from sugarcane fibres, and supplier deliveries in boxes, never plastic.

We partner with Plastic Free Cambodia and Ecosense Cambodia to push this mission beyond our own walls — into workshops, community challenges, and a growing movement towards a cleaner country. Plastic is replaceable. We prove it every day.
